Ancient roots, uncompromising quality

Our land: the olive groves between Assisi and Spello

We were born here, and here we stay: on the hills where olive trees have been grown for centuries. We take everything from this land, except shortcuts.

FAO agricultural heritage

The Assisi–Spoleto Olive Belt

At the foot of Mount Subasio runs a strip of terraced olive groves linking Assisi to Spoleto by way of Spello. In 2018 the FAO recognised it as a Globally Important Agricultural Heritage System (GIAHS): the first in Italy.

Dry-stone walls, centuries-old olive trees, native varieties such as Moraiolo: this is the landscape where our olives grow, and one we help to protect every day.

The colour of home

The pink stone of Mount Subasio

Assisi and Spello are built from Mount Subasio stone, which glows pink at sunset. It’s the same colour you’ll find on this site: a nod to the houses, churches and alleyways among which our oil grows.

Olive oil culture

Three places, one tradition

The hills of Assisi

The hills of Assisi

At Costa di Trex, on the slopes rising towards Mount Subasio, lie our organic olive groves. Sunny, breezy slopes, far from the damp of the valley: the place where the Umbrian olive tree is at its finest.

For us: this is where we harvest by hand, at just the right ripeness.

Our vision

From tradition we take our roots. From science, our quality.

What we preserve

  • Our local varieties: Moraiolo, Frantoio, Leccino, Leccio del Corno
  • Hand-picked, tree by tree
  • Our family olive mill in Spello
  • Olive oil the way we eat it: on bread and in bean soups

What we have changed

  • Milled within 24 hours: our olives never sit waiting in a store
  • Cold extraction below 27 °C, in place of the old presses
  • Certified organic olive groves
  • Tins and bag-in-box packs that protect the oil from light and air
