Our story: organic olive oil between Assisi and Spello, since 1989
The taste of simplicity, from the hills of Assisi to our olive mill in Spello.
A family-run organic farm
Since 1989 our family has tended olive groves in the Umbrian countryside, on the hills of Assisi at Costa di Trex. Today we are Agricola Nizzi: an organic farm with its own olive mill, overseeing our extra virgin olive oil at every stage, from field to bottle.
Our family olive mill: cold-extracted within 24 hours
We harvest the olives at just the right ripeness and take them to our olive mill in Spello, where they are milled within 24 hours. Cold extraction preserves the oil’s sensory and nutritional properties: family tradition and modern technology, with the same respect for the land.
- Continuous cycle, blade or hammer crusher

The Nizzi family, beyond olive oil
Frantoio di Assisi is one of the businesses of Agricola Nizzi, at Costa di Trex. Three generations, one countryside.
