Ancient roots, uncompromising quality

Our territory: the olive groves between Assisi and Spello

We were born here and here we remain: on the hills where olives have been cultivated for centuries. We take everything from this land, except shortcuts.

FAO Globally Important Agricultural Heritage Systems

The Assisi–Spoleto Olive Belt

At the foot of Mount Subasio runs a strip of terraced olive groves that connects Assisi to Spoleto, passing through Spello. In 2018, the FAO recognized it as a Globally Important Agricultural Heritage System (GIAHS): the first Italian site.

Dry-stone walls, centuries-old olive trees, and native varieties like the Moraiolo: this is the landscape where our olives grow, and which we help to preserve every day.

The color of home

The pink stone of Mount Subasio

Assisi and Spello are built with stone from Mount Subasio, which glows pink at sunset. It is the same color you find on this site: a nod to the houses, churches, and alleys amidst which our olive oil grows.

Three places, one tradition

The hills of Assisi

The hills of Assisi

In Costa di Trex, on the slopes rising toward Mount Subasio, lie our organic olive groves. Well-exposed and breezy hillsides, far from the valley's humidity: the place where the Umbrian olive tree expresses itself at its best.

For us: This is where we hand-pick them, at the perfect level of ripeness.

Our vision

We take our roots from tradition. From science, we take quality.

What we treasure

  • Varieties of the territory: Moraiolo, Frantoio, Leccino, Leccio del Corno
  • Hand-harvesting, plant by plant
  • The family olive mill, in Spello
  • The way we eat oil: on bread, in legume soups

What we have changed

  • Milling within 24 hours: olives do not wait in storage
  • Cold extraction, below 27 °C, replacing the old presses
  • Certified organic olive groves
  • Cans and bag-in-box that protect the oil from light and air
