How to choose the right format

The 500 or 750 ml bottle is the table oil: it is used raw, on bruschetta, legume soups, and salads. The 3 or 5-liter tin is the supply for everyday cooking: it protects the oil from light and air and has the lowest price per liter. All our extra virgin oils are cold-extracted from 100% Italian olives; the organic ones come from our certified olive groves on the hills of Assisi.

What is the difference between organic and conventional oil?

Organic oil comes from olive groves cultivated according to organic methods and monitored by a certified body (ICEA). Both are extra virgin, cold-pressed, and 100% Italian.

What does "cold pressed" mean?

That the oil is obtained below 27 °C, using only mechanical processes: this is how it preserves its aromas and nutritional properties.

How many days does it take to arrive?

In Italy within 2-3 working days, in the rest of Europe within 5-8. All shipping info.

From field to bottle

The new harvesting and milling season has begun.

We hand-pick the olives from our organic groves and process them within 24 hours at the Spello mill. Reserve the 2026 new oil: we will ship it as soon as it is bottled, starting from late October.
