How to choose the right size

The 500 or 750 ml bottle is your table oil: use it raw, on bruschetta, bean and pulse soups and salads. The 3 or 5 litre tin is the store-cupboard supply for everyday cooking: it protects the oil from light and air and has the lowest price per litre. All our extra virgin olive oils are cold-extracted from 100% Italian olives; the organic ones come from our certified olive groves in the hills of Assisi.

What is the difference between organic and conventional olive oil?

Organic oil comes from olive groves farmed using organic methods and inspected by a certification body (ICEA). Both are extra virgin, cold-extracted and 100% Italian.

What does “cold-extracted” mean?

It means the oil is obtained below 27 °C using mechanical processes only, so it keeps its aromas and nutritional properties.

How long does delivery take?

We hand-pick the olives from our organic groves and mill them within 24 hours at our olive mill in Spello. Pre-order the 2026 new-season oil: we ship it freshly bottled from late October.
